Spicy Thai Peanut Rice


  • 1 Tbsp. sesame oil

  • 1 cup thinly sliced red onion

  • 1 small jalapeno pepper, thinly sliced into rings

  • 3 cups cooked- Red Rice

  • 1 Tbsp. soy sauce

  • 2 tsp. lime juice

  • 1/4 cup chopped basil

  • 1/4 cup coarsely chopped roasted peanuts


Method :


  1. Heat oil in the large sauté pan over medium-high heat. Stir in onions and peppers and cook for 3-5 minutes, stirring occasionally, till lightly browned.

  2. Mix in red rice,soy sauce and cook till heated through.

  3. Remove from heat and add lime juice, basil as well as peanuts and season to taste with salt right before serving.
